Raw hamburger patties at Broadway Marketplace

Shortly before noon today I was served the cheeseburger at the Grill at Main Lodge. Unfortunately, the chefs were in such a hurry to move the crowd that they didnt thoroughly cook the hamburger patties. This is what I was served.

As you can see from the photos, the meat was actually raw in spots. The cheeseburger came with 2 patties and the other one was pink, but cooked so I did eat that.

Hopefully no one gets sick from this. Please alert Patina that they need to have the chefs cook the meat thoroughly no matter how busy it gets.

Oh that's just nasty. On the plus side.... you don't have to worry about your burger being too hot. :D

They thought you ordered tartar-burger.

And how did the cheese even melt?
I used to be with it, then they changed what it was. Now what I'm with, isn't it, and what's it seems weird and scary to me. It'll happen to yoooouuu.

That's F'n disgusting. Mammoth for a world class resort are you trying to give people some world class food poisoning? Get your act together, and get some real chefs while your at it. Sorry line cooks. :!: :roll:

Ah, I observed in one instance that as soon as the second person slapped the cheese on the top of the patty, the meat was immediately taken off the grill. So I guess it was latent heat that did it.

The patties were formed thin to cook fast, but obviously the cooks were going too fast.

I love raw hamburger. Too bad it isn't safer I would eat it that way all of the time.
If its flash frozen like sushi grade fish, is it safe ?

processing meat in a grinder incorporates a lot of bacteria, so I wouldn't eat it raw unless you grind it yourself --Which is how in-n-out can get away with rarer burgers.

A lot of bacteria stay viable frozen.
I used to be with it, then they changed what it was. Now what I'm with, isn't it, and what's it seems weird and scary to me. It'll happen to yoooouuu.

Taken straight from my fiance, a nutritionist... ground meat is never safe to eat raw, even if it is flash frozen; the high surface area to meat ratio makes it a hazardous food. As soon as the meat is cut, bacteria starts to accumulate and there are certain strains that are resistant to the freezing process. Once the thawing begins, these bacterium can "come back to life".

Moral of the story... don't eat raw meat. 8-)

I've worked in a couple of restuarants where burgers would only be cooked medium well or well done. The reason being is when they are butchering the animal it's possible that intestines and fecal matter could be mixed in, albiet most likely a tiny amount. A thorough cook insures the killing of any bacteria, and eliminates liability. The Jack-In-The-Box fiasco in 1993 with E. Coli was a major wake up call... If you hardly cook your hamburger, the safest bet (but still no guarantees) is to go to Whole Foods or some place where they have organic beef, go to the meat section, pick out a steak of your choosing and have them grind it there on the spot... that way you know where that ground beef came from...

Hey the worst could happen from eating raw hamburger is that you could get sick and die. What's the big deal?

Seared hamburger = :swear:

If you haven't done so already, make sure someone in charge knows about this. They could end up killing someone!

BTW it's also illegal to serve undercooked hamburger. If you don't get a satisfactory response from the mountain, notify the Mono County Dept of Health.

Regardless of whether In-N-Out Burger grinds their own beef, they still have to cook it in accordance with the California Health and Safety Code:

114004.
(a) Except as specified in subdivision (c), all ready-to-eat foods prepared at a food facility from
raw or incompletely cooked food of animal origin shall be cooked to heat all parts of the food to
a temperature and for a time that complies with the following methods based on the food that is
cooked:
(2) The following foods shall be heated to a minimum internal temperature of 155°F for 15
seconds or the temperature specified in the following chart that corresponds to the holding time:
(A) Ratites and injected meats.
(B) Comminuted (ground) meat or any food containing comminuted meat.

GROSS!!! If that's the way hamberger was always served I'd be a vegatarian.

I can however vouch for the Bloody Mary's served on the deck of the main lodge..

Cheapski that's awful! I hope this post will be brought to someone's attention.

And that reminds me of another "beef" I had with the food service when we were up there. I noticed that the people who were preparing the Mexican food used their BARE HANDS to add lettuce, cheese etc. to their products, such as burritos etc. I'm pretty sure that the health codes require them to be wearing those thin plastic (latex?) gloves. It made me not want to get anything from them the next day. On the other hand, we went into Pita Pit where they add the extras to the pitas with their hands, and of course they were wearing gloves.

The Mammoth cafeteria needs a health code inspection before someone or a group of people get really sick from some of their food preparation practices. :@
