Braeburns and Pink Ladies are a standard if I can't find Honeycrisps. I'll give those sumatras a try.

I just got an apple corer too but mine doesn't "quarter", just cores. What if you have to make apple rings for baked apple rings with bacon?

Then I can make apple pie in a jif! I've made this a few times but it just takes too long to peel/core the apples so I haven't made it in a couple years. Sooo yummy though.
