The bikes for rent here in Mammoth are sturdy bikes meant to take a beating. The terrain here varies from mild to super-advanced so the rental bikes are excellent. The bike shops invest in really good bikes and then, after the rental season, sell them off (around September). Don't worry about the quality of the bikes. The prices are actually pretty good considering the quality of the bikes. Try Brian's Bikes, Footloose, Mammoth Sporting goods. All three are in town and have websites you can check out. You can also rent at the base of the Gondola from Mammoth Mountain. All have great bikes so it's a matter of convenience and some variation in price.
You'll have to pay to ride the ski mountain but there are some awesome forest service roads and off-mountain biking all around Mammoth. Search the web or buy a book or cycling map (Kitridge Sports has a good collection). The forest service also provides a free local bike map that shows bike routes through the local forest service roads.
HAVE FUN!
